So we did what everyone does when they're short on time: we reached for the instant stuff.

It wasn't the answer we were looking for. Most instant chai packets were loaded with sugar, around 18 grams per cup, and when I flipped them over to read the ingredients, half the words on the label weren't things I could even pronounce. Milk "whitener" instead of actual milk. Fillers. Chemicals doing the job real ingredients should be doing. It didn't taste like the chai I grew up with, and it definitely didn't feel like something I wanted to drink every day.

We were convinced there had to be a version that was both fast and genuinely good.

What's the process?

That question turned into a lot of kitchen experiments.

I am not exaggerating when I say I lost count of how many versions I made, by the time I landed on the one that finally felt right, I'd made 37 of them. Each batch taught me something: too much spice and it overpowered the milk; too little and it just tasted like watered-down tea. I adjusted the ratio of spices to milk powder over and over until I found the balance that actually tasted like a cup of chai my grandmother made, not a flattened, sweetened imitation of one.
