Ingredients

  • 1 tbsp neutral oil or melted butter
  • 1 tbsp brown sugar (optional — taste your batter first)
  • ¼ tsp vanilla extract
  • ¼ cup all-purpose flour
  • ¼ tsp baking powder
  • Pinch of salt
  • Optional: 1 tbsp chopped walnuts or chocolate chips

Instructions

1 In a large microwave-safe mug, mash the banana until smooth, no large lumps.
2 Stir in the chai concentrate, oil, vanilla, and brown sugar until combined.

3 Add the flour, baking powder, and salt. Mix just until no dry streaks remain. Don't overmix.
4 Fold in walnuts or chocolate chips if using.
5 Microwave on high for 70–90 seconds. Start checking at 70 seconds — the top should spring back lightly when touched.
6 Let cool for 1–2 minutes before eating. It will be very hot.

A few notes before you start

1. Use a ripe banana

Brown spots mean more natural sweetness and a softer texture. Underripe bananas won't mash smoothly and won't taste as good.

2. Don't overmix

Once the flour goes in, stir just until combined. Overmixing activates gluten and makes mug cakes tough.

3. Every microwave is different

70 seconds is a starting point. If the center looks wet and the top doesn't spring back, add 10 seconds at a time.
